So I made a roast last week and only had a little bit left, since we are going to be cutting down on our spending a lot I figured I need to make dinner out of something we have in the house. After thinking about it all day I decided that the roast meat would be great fried in a little oil (just a little)
and sprinkled with taco seasoning. I had a pack of corn tortillas, cheese, salsa and tomatoes all I needed was sour cream and that was easy cause I had some catalinas from Cub so the sour cream cost me NOTHING!!!
We are also trying to eat healthier so instead of frying the tortillas in oil I threw them in the toaster oven on broil for just a couple minutes, they came out perfect. We also got lean cream, sounds funny hah. Lean cream instead of sour cream, nobody complained. It was good! I will be doing that again, it's a good way to make your roast meat last!
