Pineapple, banana mini loaves

1 Pkg (2 layer size) Yellow cake mix
1 Pkg (3.4oz) JELLO-O vanilla flavor instant pudding and pie filling
4 Eggs
1/4 Cup vegetable oil or substitute applesauce
1 tsp ground cinnamon
1 can (20oz) crushed pineapples, juice drained and 1 cup reserved
2 Medium, ripe bananas well mashed (1cup)
1/2 cup chopped pecans or walnuts

White Sausage Gravy

Who doesn't like some sausage gravy?? If you're looking for a non complicated but extremely yummy recipe, here's one!! Enjoy!

Ingredients:
1/2 cup bacon
1lb package of Hot sausage (I use Jimmy Dean)
2 1/2-3 cups of milk
1/3 cup of flour
1 1/2 tsps of butter

Directions:
Chop bacon into small pieces and cook, add the butter let melt. Add sausage to the bacon and butter and cook until all is done.

Add the flour to the sausage and whisk until it is well blended

Add milk a third at a time while continuously mixing, you don't want to let it sit cause you will burn it and it will not taste good!! Lower heat and let thicken.

Add salt and pepper to taste!!

Making Brownies....

SO I have heard, just like many of you have, that you can replace applesauce with vegetable oil when you bake certain things. I decided that I wanted brownies tonight and I thought this would be the best time to try it out cause if it turns out bad I have a cinnamon, raisin bread that the neighbor lady gave me!!
Since I make my own baby food I have plenty of frozen applesauce, easy peasy right! Well if you don't have a supply handy but you have apples sitting around just peel slice and throw them in whatever contraption you have to sauce them. An important point according to this website is that you can't get rid of oil all together because oil helps to prevent the over stimulation of the gluten in the flour. It says that you have to add 1 tbsp per every 1/2 cup of applesauce that the recipe calls for. I did that and I haven't tasted it yet but this is what it looks like!

Not too shabby right! I will let you all know what they taste like. I would do it now but I don't want to ruin dinner!! HEHE!

Update!! THEY WERE GOOD!! A little chewier then usual but they tasted great!
