1 Pkg (2 layer size) Yellow cake mix
1 Pkg (3.4oz) JELLO-O vanilla flavor instant pudding and pie filling
4 Eggs
1/4 Cup vegetable oil or substitute applesauce
1 tsp ground cinnamon
1 can (20oz) crushed pineapples, juice drained and 1 cup reserved
2 Medium, ripe bananas well mashed (1cup)
1/2 cup chopped pecans or walnuts
Directions-
Preheat oven to 350 degrees F
Combine-cake mix, dry pudding, reserved pineapple juice, eggs, and oil OR applesauce in a large bowl and mix until blended.
Pour- prepared batter into 5 foil mini loaf pans sprayed with nonstick cooking spray
Bake -40 minutes or until toothpick inserted in center of cake comes out clean.
Cool completely.
